PORK CHOPS CORDON BLEU 
4 lean pork chops at least 3/4 inch thick
4 slices cooked ham
4 slices gruyere cheese
Flour
1 lightly beaten egg
Salt and pepper
Fine dry white bread crumbs
3 tbsp. butter
1 tbsp. oil
Lemon quarters

Make a horizontal cut up to the bone and place a slice of ham and a slice of cheese inside. Cut away any surplus ham and cheese. Roughly sew up the edge with a darning needle and thin string or sturdy thread. Dip the chops in flour, shaking off any surplus and then in beaten egg, to which a pinch of salt and freshly ground pepper have been added. Finally coat with bread crumbs. Fry the chops on both sides in a mixture of hot butter and oil until brown and crisp. Remove and place on rack in a baking dish. Bake at 350 degrees for 45 minutes to 1 hour, until inside of meat is cooked and cheese has melted. Remove the string and serve with quarters of lemon.
