BROCCOLI CASSEROLE 
1 med. onion, chopped
1/4 c. butter
1/2 c. pasteurized processed cheese spread
1/2 c. milk
1/4 c. water
1 (10 3/4 oz.) can cream of chicken soup
1 c. quick cooking rice
1 (10 oz.) pkg. frozen chopped broccoli, thawed

In a large saucepan, saute onion in butter until tender. Remove from heat and stir in cheese, milk, water, and soup. If necessary, heat slightly, stirring to thoroughly blend mixture. Stir in rice and broccoli. Pour into greased 2 quart casserole and bake at 350 degrees for 30 minutes. Stir with a fork 15 minutes into cooking time to fluff rice and distribute broccoli. Serves 4 to 6.
