CHICKEN OR VEAL PARMESAN 
1/2 lb. chicken or veal
1 c. bread crumbs
2 eggs, beaten
1/3 c. olive oil
Your favorite red sauce
1/4 c. Mozzarella cheese
1/2 c. grated Parmesan cheese

Mix bread crumbs and Parmesan. Dip chicken (veal) in bread crumb mixture and eggs alternately until a thick layer has built up. Heat oil to medium temperature and add chicken (veal). Cook until desired tenderness (both sides of cutlets) and then drain. Finish with your favorite red sauce and garnish with Mozzarella. Preparation time: 30 minutes. Serves: 4.
