MOM'S FAMOUS BREAD PUDDING WITH
LEMON SAUCE
 
2 slightly beaten eggs
2 1/4 c. milk
1 tsp. vanilla
1/2 tsp. cinnamon
1/4 tsp. salt
2 c. day old bread cubes
1/2 c. brown sugar
1/2 c. raisins (optional)
2 cooking apples (optional)

Combine first four ingredients. Stir in bread cubes. Stir in brown sugar, raisins and apples. Pour into 8 x 1 3/4 round ovenware cake dish. Place pan in larger pan 1 inch deep. Bake at 350 degrees for 45 minutes or until knife comes out clean.

LEMON SAUCE:

1 tbsp. corn starch
1/2 c. sugar
1/8 tsp. salt
1 c. boiling water
Juice of 1/2 lemon
1/8 tsp. nutmeg
1 tbsp. butter

Mix first 3 ingredients. Gradually add hot water. Bring to boil. Cook over low heat until thickened and clear (about 15 minutes). Stir in lemon juice, nutmeg and butter. Spoon over bread pudding.
