PICKLED PEACHES 
16 lbs. peeled peaches, halved & seeded
8 c. boiling water
4 sticks cinnamon (in mesh bag)
4 3/4 c. Sugar Twin
2 1/2 tbsp. whole cloves (in mesh bag)
2 1/2 c. vinegar

Soak peaches in water and Fruit Fresh as directed to retain color. Simmer spices and vinegar 5 minutes. Add peaches and water. Simmer 3 minutes. Discard spices. Pack in sterile jars and cover with juice. Leave 1/4"headspace. Adjust caps. Process 15 minutes in boiling water bath. Store in cool, dark place. Yield: about 10 pints.
