PICKLED PEACH SALAD 
1 (29 oz.) jar pickled peaches
1 (6 oz.) pkg. orange flavored gelatin
1 c. boiling water
1 (8 oz.) pkg. cream cheese, softened
1 (8 oz.) can crushed pineapple, drained
Lettuce leaves

Drain peaches, reserving 1 cup juice. Mash peaches with fork; set aside. Dissolve gelatin in boiling water. Add cream cheese, stirring until blended. Stir in reserved peach juice. Chill salad until slightly thickened. Combine peaches and pineapple; add to gelatin mixture, stirring well. Pour into mold.
