SPANISH RICE 
1 lb. hamburger
1/4 - 1/2 c. diced green peppers
1 sm. onion, diced
2 c. tomato juice
1 c. uncooked rice
Salt to taste

Brown hamburger in large skillet. Drain off grease. Stir in pepper, onion and simmer for few minutes. Stir in rice and brown. Add tomato juice and cook until rice swells. (May need to add more than the 2 cups of tomato juice if rice seems dry.) Cover skillet and place in 250 degree oven. Bake covered for 45 minutes. Uncover and bake for 15 minutes. Serve hot!
