SPANISH RICE 
1 c. rice
1/4 c. butter
1 med. onion, thinly sliced
1/2 med. green pepper, diced
2 c. tomatoes with juice
1 tsp. salt
Dash of pepper
1 c. water

Heat butter in sauce pan. Add onion and pepper. Add rice, tomatoes, water, salt, and pepper. Mix well. Bring gently to a boil and cook until tender.
