CORN AND CHEESE PUDDING 
1/4 c. chopped green pepper
2 tbsp. chopped onion
3 tbsp. butter
2 tbsp. flour
3/4 c. milk
1/4 c. dry white wine
1/2 c. grated Cheddar cheese
1 (16 oz.) can whole corn or frozen corn, thawed
2 tbsp. corn meal
3 eggs, well beaten
Salt & pepper to taste
Paprika

Saute green pepper and onion gently in butter; blend in flour. Add milk and cook, stirring until thickened. Add wine and cheese; stir until cheese melts. Remove from heat. Add corn and corn meal, then eggs, salt and pepper.

Turn into a 9 inch pie plate and bake at 350 degrees for about 40 minutes or until firm in the center. Serves 5-6.

Or butter.

Or egg substitute.
