CORNBREAD DRESSING 
3 c. corn bread, crumbled
2-2 1/2 c. dry bread, crumbled
4 c. turkey or hen broth
1/2 c. melted butter
1 lg. onion, grated
3 tbsp. minced onion
1/2 c. chopped celery
2 eggs
Salt and pepper
1/4 c. buttermilk
Pinch of soda

Add bread crumbs to turkey stock. Beat eggs in, one at a time. Add other ingredients. Dressing should be soft.

Just before putting into the oven, add buttermilk with a pinch of baking soda mixed with it. Stir until mixture foams. Dressing will be consistency of cake batter, really soupy. Bake in baking dish at 375 degrees for about 40 minutes or until firm on top.
