MEAT ENCHILADAS 
1 lb. ground beef
12 tortillas
2 tbsp. shortening
2 med. onions, chopped
1/2 lb. grated Longhorn or Cheddar cheese
2 (10 oz.) cans enchilada sauce

Brown beef and onions together in skillet. Dip tortillas, one at a time, in hot shortening briefly and drain. Spread browned beef and onions on tortillas and roll. Place in shallow baking dish and cover with enchilada sauce. Top with grated cheese and place in oven and heat at 350 degrees until cheese is melted. For extra flavor, top each serving with a fried egg and chopped lettuce and tomatoes.
