CHERRY TOPSY TURVEY PUDDING 
1 1/2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 tbsp. shortening
1 c. sugar
1 egg
3/4 c. milk
1 (No. 2) can tart red pitted cherries & the liquid
1/2 c. water
1/4 c. sugar

Sift flour, baking powder and salt. Cream shortening and add sugar and egg. Add dry ingredients and milk (alternately to the creamed mixture). Heat cherries and the juice, water and 1/4 cup sugar in a saucepan. Empty half of the cherry mixture into a greased 8"x8" baking dish, pour pudding batter into the pan over the cherries. Dip the remaining cherries and juice over pudding and bake, uncovered at 350 degrees for 40 to 45 minutes.
