CHERRY TOPSY TURVY PUDDING 
1 1/2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 tbsp. shortening
1/2 c. water
1 c. sugar
1 egg
3/4 c. milk
1/4 c. sugar
1 #2 can red tart, pitted cherries (do not drain), not pie filling

Sift flour, baking powder and salt together. Cream shortening. Add sugar and egg. Add dry ingredients and milk alternately to the creamed mixture. Heat cherries, water and 1/4 cup sugar in a saucepan. Empty half of the cherry mixture into a greased 8 x 8 inch baking dish, pour pudding batter into the pan over cherries. Dip the remaining cherries and juice over pudding and bake uncovered at 350 degrees for 40-45 minutes.
