OLIEBOLLEN (DUTCH FRITTERS) | |
1 yeast cake 3/4 c. warm water 1 tsp. sugar 3 eggs 1 pt. warm milk 3 tbsp. white syrup 1 lb. pkg. raisins 4 c. flour, unsifted 3 level tsp. salt Put warm water and sugar on yeast cake. Let stand in warm place for 30 minutes. Beat eggs and combine with pint milk, yeast, syrup and raisins in large kettle. Sift flour and salt into first mixture and mix well for 2 to 3 minutes. Test a spoonful of dough to see if it will fall in lump form from the spoon. If not, add a little more water or milk. Let it rise for 2 hours in warm, not hot place. Fry in deep hot fat as for doughnuts. |
