HUMMINGBIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 eggs
1 1/2 c. oil
1 1/2 tsp. vanilla
8 oz. can crushed pineapple
2 c. bananas, cut up
2 c. nuts (1 c. batter and 1 c. in icing)

Combine dry ingredients in large mixing bowl. Add eggs and oil. Stir - do not beat - until well mixed. Add vanilla, pineapple, 1 cup nuts and bananas. Bake in 3 (9 inch) layers at 350 degrees for 25-30 minutes.

ICING:

2 (8 oz.) cream cheese
1 c. butter
2 boxes powdered sugar
2 tsp. vanilla

Mix and spread between layers and over cake sprinkling the last cup of nuts between layers and over cake.
