HUMMINGBIRD CAKE AND ICING 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. vanilla
1 tsp. almond extract
3 eggs, well beaten
1 1/2 c. Crisco oil
2 c. mashed banana
1 sm. can crushed pineapple
2 c. chopped pecans

Sift flour and measure. Sift all dry ingredients. Add all other ingredients. Mix well and fold, do not beat. Bake at 300 degrees for 1 hour and 15 minutes. (This should be baked in three layers.)

ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box powdered sugar
1 tsp. vanilla

Beat until mixed. Spread on cool cake.
