BANANA BREAD - ONE, TWO, THREE 
1 1/2 c. mashed ripe bananas
3/4 c. sugar
2 eggs
2 1/4 c. flour (sifted or 2 1/8 if not sifted)
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. melted butter (1 stick)

Put all ingredients except butter into one bowl. Mix well with a large spoon.

Melt butter and mix carefully into batter, until well blended.

Pour batter into two greased loaf pans (disposable pans 8 x 3 3/4 x 2 1/2 work well). Bake at 325 degrees for 1 hour. Cool and serve.

Keeps well at room temperature for 2-3 days, longer if refrigerated. May be frozen.
