HOLIDAY BANANA BREAD 
1/2 c. soybean oil butter
1 c. sugar
3 lg. eggs
3 lg. ripe bananas, mashed (1 1/3 c.)
3 tsp. Clabber Girl baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. candied orange peel, chopped (4 oz. pkg.)
1/2 c. mini-size semi-sweet chocolate morsels

In large bowl with an electric mixer, cream butter and sugar until light. Beat in eggs and bananas until blended. (Mixture will look curdled.) In a small bowl, combine remaining ingredients. Stir into banana mixture just to blend. Do not overmix.

Pour batter into a greased 9 x 5 x 3 inch loaf pan or three 5 1/2 x 3 x 2 1/2 inch loaf pans. Bake in a 350 degree oven for 55-65 minutes for the 9 x 5 inch loaf or 35-45 minutes for the smaller loaves or until a cake tester inserted in the center comes out clean. Cool 10 minutes in pan, remove from pan and cool completely on wire rack.
