BANANA NUT BREAD 
2 c. all-purpose flour
1/2 - 3/4 c. sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. chopped nuts
1 1/2 c. mashed bananas (3-4 bananas with all yellow or brown flecked peelings)
2 eggs, well beaten (I use whites only)
1/4 c. sour milk or buttermilk
1 tsp. vanilla extract
1/4 c. vegetable oil

Sift together first five ingredients. Mix in chopped nuts and set aside. Blend with a fork the eggs, and vanilla, then add bananas and oil. Make a well in the center of the dry ingredients and add the liquid mixture all at once. Stir only enough to moisten dry ingredients. Turn into a loaf pan that has been sprayed with non-stick cooking spray. Bake at 350 degrees for about 1 hour or until toothpick comes out clean when inserted in center of loaf. Remove from pan and cool on wire rack.

Note: There is too much batter to make 2 small mini loaves - it will run over the sides.
