CARROT PINEAPPLE MUFFINS 
1 c. sugar
2/3 c. oil
2 lg. eggs
1 tsp. vanilla
1 c. grated carrots
1 c. crushed pineapple

Mix together above ingredients. In another bowl mix:

1 1/2 c. flour
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder

Put all together. Put in greased muffin tin. Bake at 350 degrees for 20 to 25 minutes.

I really like this recipe however I did not include the pineapple as I didn't have any but really wanted carrot muffins. Great review from friends claimed they were the best carrot muffins they had eaten ever.
