BANANA RUM CAKE 
1/2 c. butter, softened
1 1/2 c. sugar
2 eggs, lightly beaten
1 tsp. baking soda
4 tbsp. sour cream
1 c. mashed banana (approximately 2 lg. or 3 sm.)
1 1/2 c. flour
1 1/4 tsp. salt
1 tsp. vanilla
1 c. chopped walnuts
1/2 c. dark rum

Cream butter and sugar. Add eggs and baking soda dissolved in sour cream. Beat well. Add bananas, flour (slowly), salt and vanilla. Beat well. On low speed add walnuts and rum. Bake in a greased and floured loaf pan for 45-50 minutes or in a fluted pan for 1 hour to 1 hour and 15 minutes at 350 degrees.
