APPLE BARS 
2 1/2 c. flour
1/2 c. sugar
1 tsp. salt
1/2 c. butter

Mix together as you would a pie crust. Add 1 egg yolk plus enough milk to make 2/3 cup. Mix into above. Divide dough in half. Roll out like pie crust, on to cookie sheet. Fill with apple mixture.

APPLE MIXTURE:

6 c. diced apples
1 tsp. cinnamon
1 1/2 c. sugar

Then cover with other half of rolled out dough. Seal edges. Slit top to allow steam to escape. Beat egg white until stiff and brush on top. Bake at 350 degrees for 45 minutes. Cut into bars. May serve hot or cooled.
