APPLE SQUARES 
2 1/2 c. sifted flour
1 tbsp. sugar
1 tsp. salt

Sift together for pastry. 1 1/2 c. sugar mixed with 1 tsp. cinnamon (use less sugar with McIntosh apples) 1 egg, separated 2/3 c. crushed cornflakes 5 c. sliced apples

Sift together flour, sugar and salt. Blend in shortening. Put egg yolk in measuring cup and add enough milk to make 2/3 cup liquid. Add milk and egg yolk to pastry. Divide dough in half. Roll out 15 x 11 inches or to fit small cookie sheet.

Cover with crushed cornflakes, then apples. Cover apples with sugar and cinnamon mixture. Roll out rest of dough and spread over apples. Seal edges. Beat egg white until foamy and spread over top of crust. Bake at 400 degrees for 30 minutes. Remove from oven and drizzle glaze make with: 2 tbsp. lemon juice

Makes 12 or 16 squares.
