MEATBALL RECIPE 
2 lb. ground beef, veal, turkey or combination
3 eggs
1/2 loaf Italian bread, stale and processed until fine bread crumbs
1 bunch fresh parsley, chopped
1 c. Parmesan cheese or 1/2 Parmesan or 1/2 Romano
2/3 c. milk
Lots of pepper
Pinch of salt
3 cloves garlic, pressed

Combine all ingredients WELL with your hands. Shape into 2 inch round meatballs; if making for soup, make some half as big. Brown in 2 cups vegetable oil on medium high heat, turning once; drain on paper towels. If you prefer not to fry, you can bake at 375 degrees for 30 minutes, turning once.

This will make enough for a spaghetti dinner for 6 to 8 people, PLUS enough for a soup dinner.
