SWEDISH STYLE MEATBALLS 
1 lb. ground lean beef
1/2 lb. ground lean pork
1/2 lb. ground veal
1 cup dry, stale bread crumbs
1 cup milk
1 onion, minced
Butter
2 eggs, beaten
Dash of nutmeg
Dash of black pepper
1 tsp. salt
3 Tbsps. flour
2 cups meat stock or consomme
Pinch of grated lemon rind
1 cup sour cream
Chopped dill or parsley
Cooked noodles or rice

Blend meats, bread crumbs and milk. Saute onion in 1 tablespoon of butter and add to meat with seasonings and eggs. Mix with your hands to get an even texture, roll into small balls. Brown in 2 tablespoons butter. Remove meatballs and add flour and stock to pan to make gravy. Add lemon rind. Return meatballs and simmer 1 hour. Slowly add sour cream and serve over cooked noodles or rice. Serves 6-8.
