SCALLOPED POTATOES AND HERRING 
6 lg. baking potatoes, sliced thinly
2 lg. white onions, sliced thinly
1 herring, boned and cut into sm. pieces
2 c. milk
1 lg. egg, beaten
2 tbsp. flour
2 tbsp. butter
Salt and pepper

Preheat oven to 350 degrees and grease 9x13 inch pan. Place a layer of potatoes into bottom of pan, add a layer of onions, followed by a layer of herring. Add salt and pepper to taste. Repeat until all potatoes, onions and herring are used. Set casserole aside.

Combine beaten egg, milk and flour and mix well. Pour mixture over top of casserole and fleck with butter. Bake for 1 hour.
