CREOLE - STYLE PORK CHOPS 
4 (4 oz.) lean boneless top loin pork chops (3/4 inch thick)
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped green pepper
1/2 c. chopped sweet red pepper
3 lg. cloves garlic, crushed
1 (8 1/2 oz.) can whole tomatoes, undrained & chopped
1/2 tsp. hot sauce
1/4 tsp. pepper
2 c. hot cooked rice (cooked without salt or fat)

Coat a nonstick skillet with cooking spray. Add onion and all other ingredients and cook 15 minutes, turning chops once. Spoon pork chops on top of rice. Makes 4 servings.
