TOMATO AND FETA CHEESE SALAD 
4 ripe tomatoes, coarsely chopped
8 oz. Feta cheese, crumbled
1/2 c. sliced black olives
1/4 c. fresh basil, minced
1/4 c. fresh parsley, chopped
1/4 c. olive oil
Scant 1/4 c. lemon juice
Salt & pepper to taste

In a bowl combine the tomatoes, feta and black olives. In a separate bowl make the dressing by whisking together the basil, parsley, lemon juice, oil, salt and pepper. Pour the vinaigrette over the salad. Mix well.

I had fresh summer tomatoes and had made a fresh batch of whey Ricotta and found this recipe. I made it for my family and a friend who came to visit. It was a hit!!! Adults teens and little ones all ate it and loved it. It's fresh and summery :)
