TOMATO, CUCUMBER AND FETA SALAD 
1 tsp. red wine vinegar
1/4 tsp. salt
pinch of freshly ground black pepper
1/2 tsp. sugar (optional)
pinch of Italian herbs (optional)
1 tbsp. extra virgin olive oil
1 1/2 c. quartered cherry tomatoes (about 2 c. whole)
1 cucumber, peeled cut in 1/2 lengthwise, seeded and cut into 1/4 inch slices
1/2 c. feta cheese
1/4 c. shredded fresh basil leaves

In a bowl, whisk together vinegar, oil, sugar, salt and pepper. Add tomatoes, cucumbers, feta and basil, toss well. Taste and adjust seasoning.

Serves two.
