TOMATO AND CUCUMBER SALAD 
4 tomatoes
1 lg. cucumber
2 to 3 fresh basil leaves
Olive oil

Cut tomatoes into wedges. Peel and slice cucumbers. Tear basil leaves into small pieces. Combine these three ingredients in a bowl. Toss with small amount of olive oil. Serve at room temperature. This salad plus crusty Italian bread and a good Provolone cheese makes a great light meal. Serve 4 to 6.
