RACHEL'S FAVORITE CHICKEN CASSEROLE | |
1 chicken fryer or 3-4 breasts, cooked and shredded 1 bunch fresh broccoli 1/2 c. mayonnaise 1 (10 1/2 oz.) can cream of chicken soup 1/2 tsp. lemon juice 1 c. mild Cheddar cheese, grated 1 c. bread crumbs 1 tsp. butter, melted Cut up and steam broccoli until tender; drain. In bottom of greased casserole, place shredded chicken. Arrange broccoli on top. Combine mayonnaise, soup and lemon juice until blended. Pour over brococli. Combine cheese, bread crumbs and butter and sprinkle on top of soup mixture. Bake at 350 degrees for 30 minutes. makes 6-8 servings. |
