CARROT RING 
2 1/2 c. mashed, cooked carrots
2 tsp. minced onion
2 tbsp. melted butter
2 well beaten eggs
1 tbsp. flour
1 c. cream or non-dairy liquid creamer

Mix ingredients, adding seasoning to taste. Pack into buttered (greased) ring mold. Place mold in shallow pan of hot water and bake in 350 degree oven 40-50 minutes.

Serve ring filled with green beans, peas, or other green vegetable.
