BAKED CARROT RING 
3/4 c. butter
1/2 c. brown sugar
2 eggs
1 c. ground raw carrots
1 1/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda

In mixer, cream butter and sugar. Add eggs and beat well. Add carrots and mix. Sift together flour, baking powder, and baking soda. Add these ingredients to first mixture and mix only until well combined. Season to taste with salt and pepper.

Grease a 1-quart ring mold and put 2 tablespoons corn flakes crumbs in bottom. Set in pan of hot water. Bake at 325 degrees for 1 hour to 1 1/4 hours. For 3 quart mold, use 2 1/2 times recipe.
