LAYERED VEGETABLE CASSEROLE 
1 lg. potato, cubed
1 green pepper, chopped
2 zucchini, sliced
2 onions, chopped
3 carrots, chopped
2 tbsp. parsley, chopped
1/2-1 pkg. frozen peas
3/4 c. uncooked rice
2 tbsp. vinegar or lemon juice
1/3 c. olive oil
2 tsp. salt
1/2 tsp. pepper
1 lb. canned tomatoes
1/2 c. water
Dash Tabasco
1 1/2 c. Monterey Jack cheese

Put all in 13 x 9 x 2 inch pan (except cheese). Bake at 350 degrees for 1 1/2 hours. Sprinkle grated cheese over all and put in oven to melt. Serves 15-20.
