LAYERED BEEF VEGETABLE CASSEROLE 
1 1/2 lbs. ground beef
1 c. sliced onions
1 c. chopped green pepper
1 lg. potato, peeled and sliced
1 c. sliced carrots
1/3 c. uncooked rice
1 (28 oz.) can tomatoes, mashed

Preheat oven to 350 degrees. Saute onions, green pepper and ground beef, until beef is browned; drain. Place sliced potatoes in bottom of 2 1/2 quart casserole. Alternate layers of rice, carrots and meat. Pour mashed tomatoes over casserole and bake for 2 hours.
