CRUNCHY CHICKEN 
3/4 c. butter
1 1/4 tsp. Italian seasoning
3 tsp. salt
1/4 tsp. onion powder
1/4 tsp. dried tarragon, crushed
1/8 tsp. white pepper
1/2 c. flour
2 1/2 lbs. chicken
5 c. Corn Chex cereal, crushed

Melt butter in small saucepan. Mix in seasonings. Add flour. Stir until thoroughly blended. Dip chicken pieces in butter mixture. Roll in Corn Chex crumbs. Allow to dry on rack 15 to 20 minutes. Place chicken in shallow baking dish. Bake in 375 degree oven for 55 to 60 minutes or until brown and crisp. Do not turn. Makes 4 to 6 servings.
