WALNUT PEACHERINE SALAD | |
2 pkgs. Jello (lemon, orange or peach) 1 3/4 c. boiling water 2 tsp. lemon juice 3/4 c. syrup from canned peaches 1/3 c. nuts, chopped 1 can peaches, sliced Maraschino cherries, halved 1/2 c. cottage cheese, drained Dissolve Jello in boiling water. Add lemon juice and syrup. Cool until thick, in refrigerator. Add nuts, stirring well. Arrange 12 to 16 peach slices and cherry halves in pan or round shallow pan or dish. Cover with 1 cup Jello mixture. Chill until firm. To remaining Jello add 1/2 cup cottage cheese (well drained). Pour this mixture over fruit and Jello layer. When firm, turn onto plate. The peach-maraschino layer will be on top, making an attractive salad. Serves 8 to 10. |
