WALNUT SALAD 
Mixed lettuces (a variety of young leaf lettuce is best, if available)
7 tbsp. walnut oil (don't substitute)
2 tbsp. mild white wine vinegar
Salt & freshly ground pepper
1/2 to 3/4 c. crumbled feta cheese
1/2 to 3/4 c. walnut pieces

Place lettuce in a salad bowl. Combine walnut oil, wine vinegar, salt and pepper in a bowl and whisk until well mixed. Sprinkle over lettuce and mix well. Scatter cheese and walnut pieces over top and serve.
