SPICY SHRIMP COCONUT RICE 
1/2 lb. peeled shrimp
1 13.5 oz. can coconut milk
1.5 cup instant rice
salt
pepper
1/2 lemon
garlic powder
dried crushed red pepper
chili powder

Bring coconut milk to a boil in a saucepan. Add rice, remove from heat, and cover. Let stand for 5 minutes. Fluff with fork, set aside.

Season shrimp with salt, pepper, lemon, garlic powder, red pepper, and chili powder to taste.

Put butter into a pan and bring to medium heat. Add seasoned shrimp, and cook for 5-6 minutes, occasionally stirring.

Add rice to the pan, adding more seasoning to your taste. Stir around and cook for 4-5 minutes.

Serves 3-4
