GRITS CASSEROLE 
6 c. water
1 1/2 c. grits
Pinch of salt
1 lb. Velveeta cheese
1/2 c. butter
3 eggs, well beaten

Cook grits in water according to directions on box. While still hot, add butter until melted -- add cheese also while mixture is hot. When cool, add eggs. Put in a greased casserole dish. Bake at 375 degrees for 35 to 40 minutes.

This is an excellent breakfast or dinner dish. It can be prepared ahead of time then baked before the meal.
