GRITS CASSEROLE 
Grits, for 4-6 people
4-6 eggs, depending on number of servings
8 oz. grated cheese (sharp)
1 tsp. bacon drippings or butter

Cook grits as directed on package for 4 to 6 servings. Chill in refrigerator. Beat 4 to 6 eggs until fluffy. Mix with chilled grits and 4 ounces grated cheese. Grease casserole dish with bacon drippings, if you have any, or use butter. Pour eggs, grits and cheese into casserole. Top with remaining 4 ounces cheese. Bake at 350 to 375 degrees for 30 minutes.

You can add crumbled bacon or sausage if you want meat.
