GRITS CASSEROLE 
This is a great make ahead dish when you have overnight guests and want an easy breakfast. Just mix and set in refrigerator (baked or unbaked) and bake next morning. (Probably at least 30 minutes since it's cold.)

1 c. Quick grits
3 eggs
1 sm. onion
1/3 c. bell pepper, chopped
1 1/2 c. shredded Cheddar cheese

While grits are cooking, crumble sausage into skillet with chopped onion and green pepper. Cook at medium heat until brown; drain well. Mix raw eggs into cooked (hot) grits, salt and pepper to taste. Combine grits mixture with sausage mixture and stir in 1 cup of the cheese. Spoon into lightly greased 10 x 6 x 2 inch baking dish. Bake at 350 degrees for 15 minutes. Sprinkle top with remaining cheese. Bake 5 minutes or until cheese melts. Serves 8.
