ONION GRITS CASSEROLE 
2 med. Vidalia onions, grated
1 tsp. salt
2 1/2 c. boiling water
2 tbsp. butter
1 c. grits
2 c. grated cheese

Saute onions in butter. Have grits ready, preparing as instructed on package directions. Add cheese and onions to grits.
