CUCUMBER SOUP 
8 c. chicken broth
2 tbsp. soy sauce
1 tsp. sugar
1 tbsp. sherry
1/2 lb. pork, cut in thin strips
2 cucumbers (med.)
Salt and pepper

In a large saucepan, combine broth, soy sauce, sugar, sherry and pork strips. Bring to a boil and then simmer for about 10 minutes. Peel cucumbers and cut in half lengthwise. Scoop out seeds and slice. Add to soup and simmer only until cucumber becomes translucent. Taste and adjust seasoning with salt and pepper. Serves 8.
