SUPER DELICIOUS SOUR CREAM CORN
MUFFINS
 
1 1/4 c. unbleached flour
3 tsp. baking powder
1 egg
1/2 tsp. baking soda
3/4 c. corn meal
1 c. sour cream (or yogurt)
1/2 tsp. salt
1/4 c. sugar

Mix dry ingredients together, omitting soda. Stir soda into sour cream or yogurt until mixture foams. Beat egg and mix with sour cream. Stir into dry ingredients until just blended. Fill greased muffin pans about 2/3 full. Bake at 350 degrees for 25 minutes.
