CREAM OF BROCCOLI SOUP 
3 tbsp. butter
3 tbsp. flour
2 tbsp. onion
3 c. chicken broth
10 oz. frozen or fresh broccoli
3 c. milk (use part cream or evaporated milk)
Shredded cheese
Salt and pepper

Melt butter, saute onions. Stir in flour and let it bubble. Add remaining ingredients except cheese. Cook 25 minutes over low to moderate heat. You can put through blender, if you wish. Add shredded cheese. Enjoy!
