QUICHE 
4 c. broccoli, cauliflower or squash (or some of each)
1 med. onion, sliced
3 cloves garlic, minced
6 eggs, beaten
1/2 c. milk
2 1/2 c. cheese, grated (try Swiss)
1/2 tsp. sea salt
1 tsp. thyme
1 tsp. cumin
1 tsp. basil
2 tsp. garlic powder

Tightly saute garlic, onions, or steam with the 4 cups of chosen vegetables. Meanwhile, mix eggs, milk and cheese and seasonings. Mix together steamed vegetables, garlic, onion and egg mixture. Pour into a oiled casserole dish. Bake at 350 degrees for 45 minutes.

VARIATION: Top with bacon bits before baking.
