GRANDMA HELEN'S EGGPLANT
CASSEROLE
 
1 lg. eggplant
4 fresh tomatoes, sliced
1/2 c. onions, chopped
1/4 c. butter
2 tbsp. brown sugar
Buttered bread crumbs

Peel and slice eggplant. Brown and arrange in casserole, add slices of tomato. Sprinkle on chopped onion, brown sugar, salt and pepper. Sprinkle bread crumbs over top.

Bake at 370 degrees for 40 to 45 minutes.
