GRANDMA'S ENCHILADA CASSEROLE | |
1 med. onion 2 tbsp. salad oil 2 lb. ground beef 1 can Mexicorn 2 tsp. salt 1/2 tsp. pepper 1/4 tsp. dried rosemary 1/4 tsp. oregano 1/4 tsp. marjoram 2 cans tomato sauce 1 sm. can enchilada sauce 12 tortillas 1/2-3/4 lb. sharp cheese 1 can olives Brown ground beef and pour off fat. Add oil and onion and saute. Add corn, spices, salt, pepper, tomato sauce and enchilada sauce. Pout half of this mixture over meat and simmer 5 minutes. In bottom of casserole, arrange 6 tortillas. Pour meat mixture over top and half grated or sliced cheese over that. Cover with remaining tortillas and cheese. Pour remaining sauce over all. Cover and bake in 350 degree oven for 35-40 minutes. |
