APPLE MUFFINS WITH STREUSEL
TOPPING
 
2 1/4 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
1/8 tsp. ground cloves
1 large egg
1/2 c. granulated sugar
1/3 c. vegetable oil
1/2 tsp. vanilla
1 c. sweetened applesauce
2 c. apples, cored, peeled and diced

Topping:

1/2 stick butter
1/2 c. chopped nuts
1/3 c. brown sugar
1/3 c. all-purpose flour

Heat oven to 375°F. Grease 12-cup muffin tin. In a large bowl, mix flour, baking powder, cinnamon, salt and cloves. In a medium size bowl, whisk together egg, sugar, oil and vanilla; stir in apples. Blend together egg mixture and dry ingredients; stir just until moistened. Divide among 12 muffin cups.

In a clean bowl, mix butter, nuts, sugar and flour until crumbly. Sprinkle over tops of muffins.

Bake for 20 to 25 minutes, until toothpick inserted in center of muffin comes out clean. Let cool in pan at least 5 minutes before removing. Lightly dust tops with powdered sugar if desired.
